Labu Masak Lemak / Pumpkin Coconut

The other day we made this delicious sweet tasty Labu masak Lemak/Pumpkin in coconut. I love this labu lemak. My mum always cooks this when we are young. I love how the pumpkin and coconut blend together, it's so creamy.

As most of us know pumpkin contains lots of vitamins and its good for us! It's also so delicious why wouldn't we love it? Plus, this recipe is really easy to prepare and less time consuming!


If you find that it's hard to make your pumpkin tender while cooking them. You can boil them. Now heat oil in a pan and add sliced onion to it. Fry till onion is soft and add diced tomatoes. Add the ginger and garlic paste. Fry well. Now add the pumpkin and coconut milk. And mix well and wait for a couple of minutes.




500 g fresh pumpkins, diced 
1 medium Onion 
1 tbsp Ginger paste
1 tbsp garlic paste
2 cup Coconut milk
1 tumeric leaves
Salt- To taste
Dash of tumeric powder
Oil


Method: 

1. Add all the ingredients except the coconut and the tumeric leaves in the pot. Let it simmer until the pumpkin is soft and tender.  

2. Once the pumpkin is tender, add in coconut and tumeric leaves.  

3. Simmer for another 5 minutes. Serve with warm rice.
