Labu Masak Lemak / Pumpkin Coconut

The other day we made this delicious sweet tasty Labu masak Lemak/Pumpkin in coconut. I love this labu lemak. My mum always cooks this when we are young. I love how the pumpkin and coconut blend together, it's so creamy.

As most of us know pumpkin contains lots of vitamins and its good for us! It's also so delicious why wouldn't we love it? Plus, this recipe is really easy to prepare and less time consuming!

If you find that it's hard to make your pumpkin tender while cooking them. You can boil them. Now heat oil in a pan and add sliced onion to it. Fry till onion is soft and add diced tomatoes. Add the ginger and garlic paste. Fry well. Now add the pumpkin and coconut milk. And mix well and wait for a couple of minutes.

500 g fresh pumpkins, diced
1 medium Onion
1 tbsp Ginger paste
1 tbsp garlic paste
2 cup Coconut milk
1 tumeric leaves
Salt- To taste
Dash of tumeric powder

1. Add all the ingredients except the coconut and the tumeric leaves in the pot. Let it simmer until the pumpkin is soft and tender.

2. Once the pumpkin is tender, add in coconut and tumeric leaves.

3. Simmer for another 5 minutes. Serve with warm rice.

Banana+Mango Wrap

Hi lovelies, this month I participate in the Back to school event held by Haffa Bexi. It's open for everyone and the best part you can send as many as you like! Come and join us in this fun, exciting event.

I feel this would be a great lunch box for the kids. Plus on the other hand, it's easy to handle and eat it.
Last Sunday we went to the school, Jaya one. They have a flea market every Sunday. So well as I usually got over excited! Everything I want to try and buy them... Yup, that's me!

So I saw this mango puree from mangolicious. You can find them at Jaya one or check out their page. They will update you their location. I personally try before buying It. It tastes exactly how we usually made at home...yum just to perfection! And the best part it goes well with almost everything.

This banana+mango wrap is super easy! Supposedly I wanted to put it on toast but there is no bread left I got extra tortillas! I say why not we make a change right? Anyway, cooking is all about exploring! Okay, here is the recipe

You will need:

4 tortilla
4 bananas (slices)
Mango puree (with chunk mango)

1. Spread light butter on the tortilla. Add the slices banana on top and put them into the oven for 10 minutes or until the banana is caramelized.
2. Remove from the oven, spread your mango puree to your liking (we put  more). And wrap them.
3. Slice the tortilla in two and its ready to be served.

Chicken Gumbo

Gumbo is originally from southern Louisiana from the Louisiana Creole people during the 18th century. It typically consists primarily of a strongly flavored stock, okra, meat or shellfish, a thickener, and seasoning vegetables, which can include celery, bell peppers and onions. Gumbo is traditionally served over rice. The dish combines ingredients and culinary practices of several cultures, including West African, French, Spanish, German.
The word "Gumbo" comes from the African word for okra, which is a vegetable introduced to America by African slaves. Today we cooked Chicken Gumbo for dinner. It's really easy to prepare only 30 minutes to prepare and cooked it.

Pan fry 4 pieces chicken thigh. Try not to put too much oil when you pan fry them. You can add more chicken thigh or leg to your liking actually, since my family is small four pieces is enough for us.

After you have pan fried the chicken, place them on the plate. Add in your onion, celery and bell peppers. Stir them until it brings out the fragrant.

Add your basmati rice in your pan. Mix the rice slowly and add in tomato puree and okra. Add in 1 cup of water or until you find it sufficient enough to cook your rice. Make sure you use a large pan because you will cook your rice in the pan itself.

For this recipe we omit the chilis, so the kids are able to enjoy this delicious Gumbo. It still delicious even you have omitted the chilis. I have seen this recipe before in Jamie's America book but haven't tried them. The one in Jamie's book it contains prawn and its more like a soup.

1 medium onion
2 celery sticks
1 small bell pepper
1 tbsp olive oil
4 chicken thighs
1 1/2 small cup long grain rice
250 g okra
1 tbsp tomato puree
Salt and pepper

Dice the onion and celery, then deseed and dice the bell pepper. Heat the oil  in a large frying pan over a medium heat. Add the chicken and cook until golden. Remove from the pan using a slotted spoon. Add the onion, celery and bell pepper to the pan and cook for 1 minute. Pour off any excess fat.

Add the rice and cook, stirring briskly, for a further minute. Add the chicken stock and bring to the boil. Add the okra and tomato puree. Season to taste with salt and pepper.

Return the chicken to the pan and stir. Cover tightly and simmer 15 minutes, until all the liquid has been absorbed and the chicken is cooked through. Stir occasionally. If the mixture becomes too dry, add more water. Transfer to warmed plates and serve immediately.

The best ever-banana bread

Last night, I planned to make banana bread for breakfast because I felt its been a while we have had a proper delicious breakfast. Where Abraham can enjoy his breakfast like he used to. Abraham was down with an ulcer in his mouth, he didn't want to eat for days.

Best to make a delicious meal so he can enjoy what he had missed four pass few days.. We made this banana bread, it's really the best-ever bread! The whole family enjoyed them. It's moist, soft, tender texture! Abraham had 3 slices of it. He really enjoys the banana bread. Since he had been sick.. We are trying to give him more potassium. As we all know banana is rich with lots of great vitamins such as protein, vitamin A, iron etc..

This banana bread really easy to prepare for breakfast or it can always have it as snacks or lunch boxes.

1 Stick butter
1 cup brown sugar
1 egg
1lb bananas, mashed
3 tbsp natural yogurt
1 tsp vanilla essence
1 tsp baking soda
1 cinnamon powder
1/4 tsp salt
1 1/2 cup all purpose flour
1/2 cup raisins
2 tbsp chopped pecans (optional)

Preheat the oven to 350 F and grease and line an 8 1/2 x 4 1/2 x 2 3/4 loaf tin. Beat the butter and sugar together until creamy, then add the egg and continue to beat until smooth. Add the mashed bananas, yogurt and vanilla extract.

Sift together with the flour, baking soda, cinnamon and salt and beat this gradually into the banana mixture. Finally, stir in the raisins and chopped nuts (if using). Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.

It's really simple to prepare can make it at night or in the morning itself.

Cheese & apple on toast

This is quick, easy and a nice way to combine fruit with protein and carbohydrates. You can replace the apple or combine it, with finely chopped celery or grated carrot instead. It's nice to have during the breakfast or lunchbox for the kids too, plus you can have snacks on the go!

Its light, simple, and delicious. The combination with cheese and apple is also a great one!
